Holiday Recipes

Food is considered an important part of many holidays, including Christmas in Iraq during the Operation Iraqi Freedom. It’s more than just food, it’s about sharing a meal together, and enjoying special recipes that become tradition.

During my first deployment in Iraq it was hard to be away from home, but we were excited that the new dining facility (DFAC) had opened in Mosul, Iraq (Northern Iraq). The Chef and his crew spiced up the holiday environment with Christmas decorations, dressed up in costumes (including Santa Claus), and displayed cutouts of reindeers in the dining hall. They cooked healthy meals for everyone, which was a source of comfort and joy especially during the Holiday Season.

My favorite part was steak and lobster, and a choice from the three available carbohydrates: rice, mashed potatoes, or corn in the cob. It was a hard choice, but we chose what our silent freedom dictated!

We made the most of the festivities available to us, and we were happy soldiers inside the wire to say the least!

It is important to always be grateful for what you have at the present moment.
